Ovens with deck for bakery

Description

The ANULAR AST steam oven combines a traditional annular pipe construction system with an innovative combustion chamber concept that reduces the masonry part to a minimum.
The indirect heating system consists of 27 mm diameter and 4.5 mm thick annular pipes; these pipes are combined in modular ring-shaped tube nests and heat the floors and ceilings of the various baking chambers uniformly.  This new construction system permits exploiting to the full the heat produced by combustion.
The oven is also more sensitive to  temperature changes and therefore more versatile and adaptable to different production needs. The baking chambers are completely closed and separate from each other.  For a more traditional baking system we suggest the ANULAR oven ASTM with wooden working , masonry parts and furnace for solid fuels (as optional) placed in the front- or in the left-side of the oven. The STAINLESS-STEEL and tempered-glass doors, with latching/unlatching system, are very practical for oven loading and can be easily removed for cleaning. The large hood ensures uniform and efficient extraction along the entire face. The columns are shaped so as to protect the control panel.
The standard digital unit permits: Controlling temperature by means of a probe located directly in the chamber.
The oven also features a safety probe, located in the combustion fume outlet.
Timed steam supply for each single chamber, by means of solenoid valves. Automatic weekly/daily oven ignition.
Baking time alarm setting. Switching on lights inside chambers.
The independent steam units, made of special steel, are heated by the recycling of combustion gases and provide instantaneous and large quantities of steam.
Easy access for any cleaning and routine maintenance. Caliberator enhancement with electrical element (optional).
The oven can be fuelled by diesel oil, fuel oil, natural gas, LPG, Butane gas, etc.
